tacos with tomato and sausage filling

This was a quick improv dinner with fresh chicken tomato-basil sausage from Trader Joes and an onion, tomato, black bean filling.  The extra filling was great for next-day tacos. We finished the last bit in an egg scramble.

Taco filling
1/2 onion, chopped
1 can black beans, drained
2 small tomatoes, chopped
dried oregano
red pepper

Saute onion and black beans in sauce pan coated with olive oil.  When onion is soft, add the tomatoes. Add oregano and red pepper to taste.

Serve in corn tortillas with sausage and shredded cheese.
