Miso and Shiso

On Sunday we went to a miso cooking demonstration from a Japanese chef at a local sushi restaurant. We got tastes of miso ginger dressing, miso guacamole, other miso sauces, and miso nabe (hotpot).  The hotpot was the most satisfying - a broth of miso, shirodashi soy sauce, ginger and garlic in which all the main ingredients were cooked.  Bok choy, napa cabbage, daikon, enoki mushrooms, tofu, meats, and noodles.



At the end of the event, there were door prizes! I won a styrofoam cup of the miso ginger salad dressing. I was crossing my fingers that hubby wouldn't win the same prize (we did not need 2 cups of dressing at home....). Instead he won this shiso plant!

I had no idea what shiso was, but it was an ingredient in a few of the recipes.  Shiso is the Japanese name for perilla, a mint-family plant, also sometimes called Japanese basil.  We had to plant it right away outside -- not only to help it grow but to keep it safe from 2 cats who found it very tasty!
