We had another pre-game cook-out at our house thus Sunday and the menu included:
- Grilled shrimp kabobs
- Yakitori
- Buffalo chicken drummettes
- Chicken bratwursts, chicken chorizo, and pork kielbasa sausages
- father-in-law's Salsa recipe - so delicious. Only made 1 batch this time
The shrimp recipe came from Mark Bittman's book, and in it he says that these shrimp are so good that you should always make extras, as they go quickly. He was right, these turned out great and were really easy to make.
Grilled Shrimp
1 large garlic clove1 tsp coarse sea salt
1/2 tsp cayenne pepper
1 tsp paprika
2 Tbsp olive oil
2 tsp freshly squeezed lime (or lemon) juice
1.5 to 2 lbs shrimp (20-30 count), peeled -- we had about 1.25 lbs
Preheat the grill
Combine the garlic, salt, cayenne, paprika, olive oil, and lime juice and make a paste. Coat shrimp with the paste. Thread onto 6-8" wooded skewers. Grill (or broil) for 2-3 minutes per side, turning once.
