Grilled Tilapia

This recipe came from watching Food Network, specifically Paula Deen and her healthy son:

We marinated this fish while making the 3-bean bake and Brussel sprouts. Grilling a delicate fish on a real grill is tricky, and a small portion of this fish flaked off and was lost in the grill. Plenty was left though, and it tasted really delicious. A recipe we should repeat again soon.

Grilled Tilapia

1 teaspoon hot sauce
1 tablespoon fresh ginger, diced
6 tablespoon freshly squeezed orange juice
1 tablespoon grated orange zest
6 tablespoon olive oil, plus additional for brushing

2 large tilapia fillets (about 0.6 lbs)
salt & freshly ground black pepper

Place the fish in a baking dish.
Whisk together the 6 tablespoons oil, the orange zest, orange juice, ginger, hot sauce, salt, and pepper, to taste; pour over the fish. Cover and marinate in the refrigerator for 30 to 60 minutes.

Prepare grill. Brush the fish with additional oil. Grill until fish just flakes when tested with a fork, about 5 minutes per side for each inch of thickness.
