Salmon and Stir Fry

Back in ATL

Our first full day back in Atlanta after a 31 hour return trip from Australia (Cairns - Sydney - LA - Denver - ATL), we were operating in a time zone approximately 14 hours ahead. Ate the first meal of the day at 4pm, and made this dinner around 11pm.

We were quite lucky to have frozen salmon fillets from Costco still in the freezer, as well as the last bit of remaining soy marinade that we typically use for grilling vegetables.  Although we originally planned to grill outdoors, since we were cooking so late at night, we cooked inside. Surprisingly, the salmon was even better when baked than when we've grilled it on cedar planks.

For the veggies, I sauteed chopped onion, yellow squash, broccoli, and sliced mushrooms plus dried thyme. After those had softened I added about 1.5 teasp of chili-garlic sauce, 1.5 teasp of black bean sauce, and the remaining ~1/4 cup of the soy marinade

(original soy marinade recipe: 1 cup soy sauce + 1/2 cup water + 1/4 cup sugar + 1/4 cup mirin)

I was surprised that my impromptu throwing together of sauces made a really great vegetable dish. It had a slightly sweet, hot, and soy flavor.

Cat on the Kitchen Table was forgiven for the sake of the picture and out of guilt for leaving the kitties alone for 2 weeks.
