Oatmeal Raisin Cookies

Inspired by 2 massive Costco bags of Sunmaid raisins, I decided to make oatmeal raisin cookies before our weekend trip to Chicago. These turned out to be good travel food!


Oatmeal Raisin Cookies (makes ~40-45 cookies)

1.5 sticks unsalted butter, softened
1 cup packed brown sugar
1/2 cup granulated sugar
1/4 milk
1 large egg
1 tsp vanilla
1 cup all-purpose flour
1 tsp cinnamon
1/2 tsp baking soda
1/4 tsp salt
3 cups old-fashioned oats
1 cup raisins

Preheat to 350.
Beat butter, sugars with mixer. Add milk, egg, vanilla and mix until light and fluffy.
Combine flour, cinnamon, baking soda, salt.  Add butter mixture to flour and stir well.
Stir in oats and raisins.
Shape 1 Tablespoon size cookies and place onto cookie sheets lined with parchment paper.
Bake 12-15 minutes (~13 min). Cool on wire racks.
